Get Healthy with this Vegan Okra and Tomatoes Recipe
5 tbsp. vegetable oil
1 celery stalk, thinly sliced
1/2 onion, peeled and thinly sliced
1 jalapeño, seeded and thinly sliced
3 garlic cloves, thinly sliced
1 tbsp. tomato paste
2 tbsp. red wine vinegar
1 1/2 cups vegetable broth
1 tsp. fresh rosemary, finely chopped
1/2 to 3/4 lb. fresh okra, sliced on a bias into 1/2" slices
5 plum tomatoes, diced
Salt and pepper (to taste)
Preparing the Base Sauce
-Warm 3 tbsp. of vegetable oil in a large pan over high heat.
-Add the onion, jalapeno and celery to the pan and sauté for 2 minutes, stirring occasionally.
-In a small bowl, stir together the tomato paste, vegetable broth and vinegar.
-Pour the tomato paste mixture into the pan with the onions.
-Add the rosemary and salt.
Preparing the Okra
-Heat the remaining oil in another saucepan over high heat for 2 minutes.
-Spread out the okra on the oiled pan and allow the okra to brown for 3 minutes on each side.
Assembling the Dish
-Add the okra into the base sauce, and then add the tomatoes.
-Plate and serve.
