Chicken, Lemon and Garlic
Skinless chicken breast fillets are sliced into strips and stir-fried in shallots and garlic, then seasoned with paprika, lemon juice, salt, pepper, and parsley in this kind of super easy and very healthy chicken recipes for lemon garlic chicken. One of the common problems when cooking a chicken recipe using chicken breasts is that they dry up quite easily and taste bland because they contain little fat and are pure white meat. The skin adds flavor to the chicken breast but it also adds calories and fat to the dish. The best way to cook chicken breast is very quickly frying it over medium high or high heat, which is a method known as stir-frying.
In this recipe, the chicken strips are quickly cooked together with the garlic, shallots, and paprika so that they remain moist and juicy while forming a nice brown exterior. Because they are sliced into strips, they cook very fast all the way through. The juice from the lemon adds moisture and zest that the chicken meat absorbs as it cooks in the pan. Use a wok or frying pan when cooking the lemon garlic chicken. It is important that the pan can withstand a high amount of heat so that the chicken, garlic and shallots do not burn while cooking.
Another method for enhancing the tenderness and moisture of the chicken is pounding it until it flattens, such as indicated in this recipe. The chicken breast is wrapped in waxed paper on both sides and pounded with a rolling pin until it is only a fourth of an inch thick. The flattened breast are then sliced into strips and cooked in the large skillet.
8 oz skinless chicken breast fillets
2 tablespoons olive oil
1 shallot, chopped fine
4 garlic cloves, minced
1 teaspoon paprika
Juice from 1 lemon
2 tablespoons chopped fresh parsley, plus more for garnishing
Freshly ground pepper
1. Lay the chicken breasts on a piece of waxed paper. Cover with another piece of waxed paper and strike with a rolling pin until the chicken is about ¼ in. thick. Slice the chicken into ½ in. wide strips.
2. Pour the oil into a large skillet and warm over high heat. Add the chicken, shallot, garlic, and paprika and stir fry over high heat until cooked through and golden, about 3 minutes.
3. Add the lemon juice and parsley and season with salt and pepper. Garnish with parsley and serve with lemon wedges.
