Do you eat ethically?
By Marinés Lares. For people who cook one or two meals every day as a routine, two opposite feelings may occur to them after cooking:
Category #1. They need to wait a little bit after cooking to eat what they just cooked, because they have been tasting the flavor and smelling the aroma during the process and their brain needs a rest to re-star again and have the meal or
Category #2. They can’t wait to eat the dish they just prepared. The mood of this second category may happen after vacations or weekends.
These happened to me after Christmas when I returned home and I prepared this delicious rice with chicken, carrots and broccoli.
This is an only one dish, no sides required.
Just cut one or two chicken breast in small squares. Season them with salt, garlic, (optional cumin) and onion powder. Keep them marinates for 10 minutes.
Just cut one or two carrots shape round (Tiny).
Separate the broccoli. (Broccoli is the last vegetable you add before covering the skillet).
½ Onion. Cut it in two sides (For the flavor, take it away when serving).
½ Pepper. (Green or red, does not matter, it is not spicy) Cut it in two sides (For the flavor, take it away when serving).
Two cups of white rice (I love Jasmine Rice).
Preparation (I cook listening from classical to rock and heavy metal music)
In a big skillet (Pictures) pour two soup spoons with oil and heat it a little bit. (Do not let the oil to expel smog. It means that it is burned and it is dangerous and you can have fire in the kitchen).
@ Middle heat (Fuego medio)
ADD the chicken squares to the skilled and brown them. Move them with a wooden spoon all around the skillet; until they are brown, they are not well cook yet. This process takes about 7 minutes.
Add the two (2) cups of white rice and mix it with the chicken squares just for 3 to 5 minutes.
Add four (4) cups of water (the same cup you use to measure the rice), mix it again.
Add 1 ½ Salt spoon and again pour garlic powder (remember that the chicken is already seasoned and we do not want salty food).
Add 1 vinegar spoon soup (any kind, I love to add vinegar to any rice, I believe it helps the rice to me more loose and white.) .
Add carrots and broccoli and INCREASE THE HEAT TO HIGH (FUEGO ALTO) BECAUSE YOU WANT THE WATER TO START BOILING)
LEAVE IT ALONE UNTIL THE WATER STARTS TO BOIL, COVERED COMPLETELY AND LOWER THE HEAT LESS THAT THE MIDDLE LEVEL, WAIT 25 MINUTES AND VOILA, HERE YOU HAVE YOUR ONE DISH FOR THE DAY…
I could not wait to eat it the first day I cooked after Christmas.
