    Chicken Salad with a Healthy Twist


    Chicken recipe can take only a few minutes to prepare and be unfussy and simple such as the classic chicken salad. At its most basic, chicken salad consists of chopped cooked chicken meat mixed with mayonnaise or salad dressing served on top of lettuce, avocado, cucumber, tomato or toast. It is also commonly prepared as a sandwich. The best recipes for chicken salad can be made healthy using lean white and skinless chicken meat that has been poached, boiled or roasted without any additional fat. Low fat mayonnaise can be used or substituted with yogurt dressing or sour cream instead.


    Chicken Salad Variations


    Other common ingredients added to chicken salad to add flavor and texture are onions, celery, chopped hard-boiled egg, pepper, lemon juice, pickles or relish, mustard, and grapes. Chicken salad is one of the best recipes for using up leftover chicken whether the chicken is roasted, grilled, fried or boiled as long as it is cooked. Only the meat is used and chopped and the skin is usually discarded or used for other recipes. The chicken meat can be ground up fine, shredded, or sliced into cubes or chunks. Chicken salad may also refer to garden salad with chicken strips or shreds used as garnish on top or tossed with the salad allowing countless of healthy chicken recipes.


    Low-calorie Chicken Salad


    Salad with chicken as a main ingredient can be prepared and served as a light and nutritious, low-calorie meal. A simple chicken salad meal can consist of lettuce greens tossed with cubed cooked chicken, grapes, and toasted walnuts, and dressed with fat-free yogurt seasoned with salt and pepper. For a bit of spice and tang, add a pinch of curry powder to the yogurt dressing. The grapes may also be substituted with chopped apples together with chopped celery to make a Waldorf-style salad.


    Chicken Caesar Salad


    Make a light chicken Caesar salad using silken tofu instead of mayonnaise. Mix the silken tofu with extra virgin olive oil, lemon juice, Dijon mustard, red wine vinegar, crushed garlic, Worcestershire sauce, anchovy paste, salt, pepper, and Fresh parmesan cheese. Toss together chopped romaine lettuce, chopped cooked chicken breast, fat-free croutons and drizzle with the low-fat dressing.


    Asian-style Chicken Salad


    Asian-style chicken salad consists of cooked and shredded chicken tossed with shredded lettuce, cabbage, carrots, cucumber, shallot, and cilantro and dressed with an Asian-inspired vinaigrette consisting of rice wine vinegar, soy sauce or fish sauce, sesame oil, vegetable oil, sugar, chili flakes, ginger, and lime juice. The salad can be garnished with toasted peanuts and crispy chow mien noodles.


    Chinese Chicken Salad


    Chinese chicken salad is a popular dish that originated in the United States despite its name. Common features of the salad include lettuce, chicken, sesame oil, ginger, and deep-fried wonton skins or noodles. Other dressings may include a peanut sauce as well as Mandarin orange slices, water chestnuts, or crushed instant ramen noodles.


    Grilled Chicken Salad


    Grilled chicken makes a scrumptious addition to a wide range of salads especially summer salads served during backyard barbecues. It goes especially well with tropical flavors like pineapples or mangoes or Mexican ingredients like avocados, salsa, cilantro, and black beans.
