    Bibingka is a rice cake from the Philippines and traditionally you can see and it is eaten during the Christmas season. Nowdays, if people want to eat Bibingka , it is available everywhere and if there are events that needs a native food to be featured, Bibingka will be present. In the recent event for Tennis, Bibingka was one of the featured food.


    What is Bibingka made of? It is made of rice flour, water or coconut milk. The traditional way of cooking the Bibingka is cook in clay pot. It is lined with a banana leaf . The clay pot is placed over a preheated coals. The mixture of bibingka is poured into the clay pot. Red egg is added on the top of the mixture. Another set of preheated coals is covered on the top of the bibingka. In a few minutes the Bibingka is ready to serve and make sure not to leave it very long in the stoves as it will  become too much toasted. Bibingka is serve with shredded coconut and sugar on the top with matching  Puto Bubong (another type of rice cake)
