    After watching Good Morning America introduce “Will it Waffle?” I had to try out one of my converted oatmeal cookie recipes with my waffle maker. I usually eyeball ingredients; however, for this experiment, I used a measuring cup and spoon. Once the cookie dough was the right texture, I rolled a spoonful of cookie dough into a ball and placed them on each of the four waffle squares. I waited the suggested cook time, and served the waffle cookies warm with a little powdered sugar.

    The experiment was a success! Such a treat!

    1-cup whole-wheat flour
    ½ cup tapioca flour
    1 stick of butter
    1 tbs. olive oil
    ½ cup plain Greek yogurt
    ½ cup raw sugar
    ½ cup brown sugar
    2 eggs
    1 tsp. baking soda
    1 tsp. cinnamon
    dash salt
    2 cups whole oatmeal
    1-cup steel cut oatmeal
    add: (beat in blender) ½ cup whole organic almonds and ¼ cup almond milk
    ¾ cup raisins
    ½ cup chocolate bits
    ¼ cup flax seed
