An "Elvis-esque" Peanut Butter and Banana Brown Bag Lunch
After making an Ultimate Brown Bag Lunch video yesterday, I couldn't stop there. I picked up my laptop and headed back into the kitchen when I woke up this morning and put together a very familiar sandwich. But rather than using soft white bread, you know the kind that sticks to the roof of your mouth, I used a slice of country loaf that I keep in the freezer for a variety of uses; sandwiches, croutons, bread crumbs and stuffing.
I decided to grill it; to make a panini.
It's simple, pull out a jar of your favorite peanut butter, slice a banana and you've got the basics down. I used a very slightly under-ripe banana. It was not bitter or too firm, and was not too soft to cut nicely.
I put a little butter in a grill pan and the sandwich went in. I used the panini weight that came with the pan, but if you don't have one or the other or both, use a skillet and a weight on top of a plate. A brick or a heavy rock will do!
Cook until you see the peanut butter melting and until the bread is golden brown and crunchy and you've got a great sandwich.
Don't wrap it until it's completely cooled down, so if you are making this before heading out to work, cook it up and let it sit on a rack or on a cool surface until it's cool and after you're showered and dressed, wrap it in aluminum foil and drop it into your lunch bag.
I added baby carrots and a few strawberries and a handful of cheese crackers to round out my lunch.
It's a very inexpensive meal that will satisfy your lunch cravings and is one that you don't need any kitchen equipment for once you're at work.
