    Brown Bag Day 2


    As promised, I am trying to post a brown bag a day for the week.  No, I didn't sleep in, just was in a hurry this morning to go fishing.  The lunch pictured is what I packed for me & my 2 children.  Dad had a lunch meeting today, so I didn't have to pack for him.



    Today we had  chicken salad sandwiches.  This isn't something I make very often.  But, boneless, skinless chicken breasts were on sale for $1.79 a pound which is much cheaper than buying lunch meat from the deli.  I cooked 2 extra chicken breasts for dinner last night which I turned into the chicken salad.  I just chopped the chicken, added onion, celery, a bit of dijon mustard, black pepper and just enough mayo to make it all come together.  I lined 2 slices of 100% whole wheat bread with some of our home grown lettuce then the chicken salad.   By lining the bread with lettuce on both sides, it keeps the bread from getting soggy.  Cost:  $1.50




    We had some of our 33 cent per pound apples again.  Cost:  15 cents




    Since it's Spring break and we were going on a special day trip, I made some homemade brownies.  One batch makes 16 brownies so we shared some of them.  My son's lunch was $3.35 because the kid ate 3 brownies.  He's 13 and has a hollow leg. : ) Cost:  50 cents each




    For a snack, I packed granola bars.  I bought these at my favorite snack place, The Grocery Outlet.  Cost:  20 cents




    So, here we have another really nice brown bag lunch for just $2.35 if you can keep your brownie consumption down!  It was delicious.   We were hoping for catfish and hush puppies for supper but the fish didn't cooperate!
