Salad: A different perspective
It can be challenging to eat healthy vegetarian food on a budget and I'm sure most of us are bored by the typical salad of wilted lettuce, mealy tomatoes and boring dressing.
Why not kick it up a notch? Collard greens are a nutritional powerhouse and super cheap! I can find a HUGE bunch for $1.29. Using collards as a base wrap is a smart way to dress up your salad course.
In the above dish the collard was filled with spiralized daikon and carrots. (You can also make these noodles with a julienne peeler)
I made simple dressing out of veggie stock, toasted sesame oil, flax meal, garlic, ginger and soy sauce. Wasabi, pickled ginger, scallions, avocado, siracha and toasted sesame seeds provided the last layers of flavor.
Just wrap and serve for a different start to your meal.
If you want to serve this as a light lunch, I suggest adding marinated tofu or chickpeas to the mixture. Wrap and roll!
