Veggies and Legumes are inexpensive and plentiful!
One of the comments I get when I tell people I'm vegan, is "vegan food is so expensive!"... Not if you cook!
Sure soy imitation meats, and other animal product substitutes are expensive - but not more so than the products they imitate. Also, the price of soymilk per gallon has dropped below that of milk. Check out the price of a 15 oz can of beans (good eatings for several days for a single girl like me) - $1.19. Buy your own beans and soak them, you'll get four times the canned amount for the same price.
Indians have been eating vegan meals for thousands of years, I grew up on them, its not so strange, promise!
Here are some photos of cheap, purely plant-based and yummy meals I've made. One of them is an Indian meal called Chole I made with a $2 box of masala (chole masala by Badshah), a $1.19 can of chickpeas, one small onion (a bag of more than 10 is $2) and 2 roma tomatoes (maybe $.30 each).
