Sancocho
This soup is out of this world. My grandmother would prepare this dish only when the entire family was together. It is no small task either; it takes almost all day to cook. It contains yuca, plantains, cilantro, and many grains. It's delicious. I wish I knew how to make it. There are many Latino versions but my favorite is the Ecuadorean as well as Colombian versions with fish. I can't wait to go back down to SOuth America and have tons of it. MMM>
