Chicken Vindaloo

Although I've never purchased a subscription to Gourmet magazine, I've very much enjoyed watching Gourmet's Diary of a Foodie. Recently, after seeing an episode featuring the diverse cuisine of southern India, I decided to try my hand at one of the dishes featured on the show, Chicken Vindaloo. Ruth Reichl, Gourmet's editor-in-chief, has made a concerted effort throughout her tenure to introduce great food to the common man, and this has included offering recipes that rely on everyday ingredients as substitutes for the more exotic items that often appear on her shows. Chicken Vindaloo turned out to be a simple recipe that was light on the wallet, good for the body, and utterly delicious. Thank you Gourmet; I will be harvesting more recipes from your website in the near future, and am keeping my fingers crossed for a revival!
