Marshmallows
Made some marshmallows this evening
30g gelatine
1 cup cold water
200g sugar, colouring and essence
icing sugar for dusting
Measure the water equally into two glasses, soak the gelatine in one quantitiy of the water. Pour the balance half quantity of water into the saucepan and heat up with the sugar. When it boils well, add the soaked gelative and keep stirring till a glassy film falls from the spoon.
Remove from the fire and continue stirring till slightly cool. Pour into a bowl and whisk till foamy and white, put the colouring and essence and pour into a slightly buttered dish and leave to set for about 8 hours. When set cut in cubes and dust on a tray of sieved icing sugar.
Pack in air tight tin.
P.S. as usual I could not wait 8 hours!!!
