Cabbage, Baked
I made this last evening and its very tasty, golly didnt know that cabbage tasted so nice!
2 cupfuls boiled cabbage 1 gill milk
1 oz. butter pepper
1/2 oz. flour salt
1 egg breadcrumbs
Take the remains of cooked cabbage and chop them finely, removing any hard portions. Put the chopped cabbage into a saucepan, add the butter and stir over the fire until hot. Season with pepper and salt, deredge in the flour and add the milk. Stir for a few minutes, take it off the fire and stir in the beaten egg.
Grease a pie dish, put in the cabbage mixture, sprinkle the breadcrumbs over the top, place some small pieces of butter over and bake quickly in the oven or under the grill.
I put a little bit of grated cheese on top to give it a little bit of flavour, you can omit it if you dont want it.
