Savoury Rice
I had this for my lunch today. Just a little rice tempered with chopped leeks and eggs.
2 breakfast cupfuls boiled rice
2 large eggs
a desertspoonful shredded red onions
1 dessertspoonful chopped green chillies (seeds removed)
2 leeks (chopped)
4 tablespoonfuls of melted ghee (I used margarine)
salt and pepper to taste
Fry the leeks in the ghee (margarine) for about 5 minutes, then add the chillies and onions and fry all together until cooked but not brown. Beat the eggs in a bsin with salt and pepper, turn into the same pan and fry all together 'scrambling' the eggs into rather coarse pieces, by mixing round and round with a wooden spoon. Now add the cooked rice, a big spoonful at a time and mix well with each additon. Pile up on a hot dish and serve.
Can be served with chicken curry, fish curry or beef, but it quite good by itself.
