Date Cake
Date cake, again written down by my mother in an old, and one and only battered receipe book, which is coated with flour, and vanila essence, and is now in a grubby state. It was date cake every weekend, it was all sticky and gooey and nice and very tasty, Everyone of my relations loved the date cake which my mother made, I remember so many people asking her for the receipe.
Date cake - receipe written in my Moms own handwriting
1 1/2 cups flour (leveled)
1 cup dates (chopped ) 1 lb)
1 cup boiling water
1 level tsp soda
2 ozs. margarine
1 cup sugar
2 ozs. ginger, candid peel and nuts
Method Soak dates in boiling water (or tea) with the butter and soda for 1 hr. Beat egg and sugar (she has not mentioned the egg on top must have forgotten to write it down) mix in the soaked dates and add nuts peel and ginger preserve. Bake for about 45 to 1 hour (moderate oven)
