    Ellie Mae - Overrun!

     

     

    Wow, thats a whole lot of food! The Morgan family has been working hard this summer making sure we will have food for the winter.  The garden is doing GREAT!

     

     

    Since the last post we have frozen about 300 ears of corn, made oodles of dill pickles and pickled squash, harvested and canned about 50 lbs of tomatoes and started giving away some of our cherry tomatoes and green beans.

     

     

    The can room is getting full with about 200 quarts of green beans, 30 quarts of peachesand cans and cans of rasberry jelly, strawberry jelly, pickled okra, hot peppers, pickled squash, tomatoes, pickles, pickled beets and I'm sure something I am forgetting.

     

     

    Dinner this weekend was FANTASTIC! We enjoyed eggplant parmasean and spagetti with the eggplant and tomatoes and basil for marinara coming from the garden. Fresh tossed salad with homegrown tomatoes and cucumbers.

     

     

    Sunday breakfast included fresh canteloupe from the garden and snacks included fresh picked grapes from our vines.

     

     

    This week we will be putting up more peaches, squash, green beans, rasberries and tomatoes. We will also have to do cucumbers and maybe some more corn.

     

     

    The garden is producing wonderfully! In fact now that some of the heartier veggies have started to come in my grocery budget has dropped considerably. Last week - I spent $40 at the store and that included diapers!

     

     

    We are overrun with veggies of all kinds and are canning or freezing enough to feed 7 until next summer when the garden will have us BUSY again.

     

     

    A little hard work and a little patience has helped this country family survive.

     

     

    This fall - when we slaughter the pigs, buy a  side of beef and a goat we'll be asking: Grocery store? How do I get there again?
