It All Starts with the Peas & Rice...
Islanders know what I mean. No matter if you call it Peas & Rice like us Bahamians or Rice & Peas like many other West Indians, no meal seems complete without it!
My mother being a nurse and obsessed with her kids eating well raised us up on lots of vegetables! Beans & Butternut Squash are just two of my favorites. Throw in a little meat or in this case chicken and voilà! Dinner.
Side Note: I just love taking pictures of food so I didn't even have to take one for this assignment. I always break out the camera anytime I look down at the plate and think, now THAT looks delicious!
