    Chile Relleno

     

    Since 1999, Taqueria El Charro Tapatio has been a favorite of Mexican food fans in Seguin, Texas. Customers literally line up for the Chile Relleno, which is only made early Friday morning and served as a weekly special. Because of the time and effort involved, two cooks work hours to prepare only 40 Poblano peppers. They are fried, peeled, cut, stuffed with beef or cheese, dipped in egg mix, sprinkled lightly with flour and fried again. Topped with ranchero sauce and served with refried or borracho beans, salad and a choice of corn or flour tortillas, this meal is truly one of a kind. Get there early on Friday, because they’re usually gone by mid afternoon.
