    Shrimp 'n Grits

     

    Shrimp and grits has long been a staple in the South, yet too often it's been overdone. But at Solas, where I'm the director of sales and marketing as well as a dedicated patron, Chef Hicks allows the true flavors of the dish to shine through by sticking to the basics. His recipe combines fresh shrimp, applewood smoked bacon, worcestershire sauce and three kinds of peppers over yellow stone-ground grits. What makes the food even more enjoyable is the excellent service and sophisticated (yet approachable) atmosphere of Solas. Top dinner off with a drink on their one-of-a-kind roof deck and you've got an amazing evening out!
