Fair-trade chocolate challenge
Quick and Simple Fair Trade Chocolate Treats

Making something delicious from Fair Trade Chocolate does not have to be complicated. At our house we love to dip fruit, Ritz Crackers , pretzels, marshmallows, potato chips, just about anything in chocolate. For this assignment I melted a 3.5 ounce Green & Black 70% , Fair Trade Chocolate Bar in the microwave about 20 seconds. With dark chocolate it is real easy to over heat in the micro or in a double boiler. You really have to watch and be careful. If you do over heat you can add a little cream or butter. Do not ever try to thin with water.
I added some raisins and walnuts. Spooned out by the tablespoon on a plate. I allowed this to sit on the counter for about five minutes, then slipped into the refrigerator until hardened enough to pick up. Pecans are delicious, as well as pea nuts or cashews, if you feel like a nut.
I noticed several companies on line that offered Fair Trade Chocolate, however I did have a difficult time locating it at several store. I found the Green and Black brand at the commissary on Andrew's Air Force Base. They have a very nice organic and international selection of goods. I can honestly say I had never thought about the chocolate that I used, where it came from and at what price to human suffering it may have caused. Knowing these things and tasting how delicious this chocolate is, I will never think of chocolate the same way.
Shame on the largest chocolate makers in the USA for not requiring all the chocolate be Fair Trade.
By the way, the chocolate bar it's self was fantastic and so good for you.
