    Rojões Minho's Style*

     


    Wash the potatoes and boil them with the skin

     

    The Ingredients

     

    Potatoes, pork chunks,beef chunks,
    Portuguese Sausage( From the tongue)
    Pork blood, wine and Bicas, cilantro and cominhos

     

    Bicas are made from Wheat and corn flour ,salt,water and pork blood and are named in different way all over Minho (north od Portugal

     

    We don't use "redanho"- that is a fat from the female pork. Traditionally the meat and bicas are fried in the "unto" that's another kind of pork fat. We use Olive Oil.

     

    Traditionally Vinho Verde  accompanies Rojoes ...but you can use  your preference. We like Alentejo and Douro.

    Made differently in all Minho area...but the basics are the same,
