    The Filipino UBE Pie

    CNN PRODUCER NOTE     Dovinator, a Filipino design engineer in Auckland, New Zealand, says this is how you make a purple yam pie: 'Buy whole purple yam root crops or ready grated pouches (available at Asian stores). Steam them. Mash. Mix with 1 kilo of brown sugar, condensed and evaporated canned milk. Put in large caldron. Keep stirring in low heat. This is a labor of love for the next 1.5 to 2 hours...so keep stirring because if you don't, it will burn.Never mind an aching arm afterwards -- worth it for the taste. When [it's] really thick and you can't stir anymore...that's when it's ready.'

    I dare say you don't know what you're missing until you've tasted the Filipino UBE (purple yam) Pie : )

     

    Sorry if I sound proud : ) but I have had a couple of Kiwi friends taste this in the past and the next thing I knew, they were paying me to bake them some!

     

    Anyways, pardon the lack of pie...they ran out at the store : )
