Kiping ( rice - tacos )
The San Isidro Pahiyas Festival will never be as brilliant and as merry without KIPINGS. It is a leaf shaped rice wafer which varies in colors and is use as an ornament in decorating the facade of the houses in Lucban during the festival.
Kiping making is an art which requires effort and time. First, you have to collect leaves (cacao), cut it into same sizes because this will serve as your mold. Then, prepare the rice paste. Grind rice (* soaked in water for a couple of hours), add in food colors and a pinch of salt, paste it over the leaf, steam for 30 minutes, let it dry, peel it off very gently to avoid cracks. you can now assemble and hang it like a chandelier or arrange it like a flower.
Kipings can also be fried or roasted. Just sprinkle a little sugar to taste.
