In the mountains of north Lebanon, a butcher has already sold all the meat of that day. Only the heads of two goats were left hanging outside the door of his shop. “We normally sell the heads for people to cook them on a Sunday lunch when the family gather” the butcher said. “There’s plenty of meat within the head including the tongue and the brain”, he added.
