Restaurant Cotton in Monroe, LA
Cotton in Monroe, Louisiana’s is a fine-dining gem housed in a historic brick cotton-and-bourbon warehouse. The vintage-industrial atmosphere underscores the no-nonsense unfussiness of chef Cory Bahr’s North Delta Cuisine. There are not too many well-established restaurants that showcase North Delta Cuisine, and everyone should take notice. I visited Cotton after seeing chef Cory be crowned champion on the popular Food Network program, Chopped!
Cotton’s menu is filled with products that are locally and regionally exclusive like Rabbit Cassoulet engulfed in freshly caught rabbit, chanterelle sausage, stewed white beans, black kale, roasted garlic and hand-picked cherries. By popular demand, his Muscovy Dusk Wraps remain on the menu all year round. Perhaps he is partial to the protein as his friends and neighbors are the Robertson family of the famed television series, Duck Dynasty! Bahr does what it takes to make good food and uses ingredients because they’re delicious, not because they’re fancy or a trend.
