    Easy Vegetable Recipe Ideas

     

    The world revolution in food has driven individuals to go green, either being a vegetarian or a vegan. The only way to start this advocacy would be creating healthy vegetable dishes. It's actually easy creating vegetable dishes that are appealing to the taste buds, even to those who initially do not like vegetables.

     

    Vegetarians or vegans are classified into different categories. But the common denominator is the large part of vegetables in the diet. Here are some of the easiest and best recipes for starting out vegans.

     

    Potato Roti Curry

     

    Coming all the way from the Caribbean, this curry made with sweet squash is sure to take your taste buds to a higher level. This vegan recipe is very easy. Just heat some oil in a large stock pot then add onion and garlic with constant stirring until it is tender. Then add potato, bell pepper and of course the star of the soup, squash. Pour in water and coconut milk until it is brought to a boil. Let is simmer and wait until the potato is tender. Serve with roti, the Indian equivalent of pita bread. Coat it with butter for extra flavor.

     

    Koshari

     

    Koshari is an Egyptian street food but is a gem to everybody's appetite. It is made out of rice, past and legumes adorned with sweet and spicy tomato sauce topped with creamy caramelized onions. Prepare you sauce, and heat it on a large saucepan. Check to make sure that it is under medium heat. Add chopped onion and garlic. Stir in salt and pepper to taste. Just remember that the vermicelli that you are going to add after which will be sautéed for two minutes or until it will be golden brown. Enjoy and feel your authentic Egyptian experience.

     

    Homemade cereal

     

    We have heard of boxed muesli and other whole wheat cereal but we are not sure if they give us the benefit we need especially now with the advent of preservatives and GMO. All you need to do is just place the flaxseed in a grinder until it is coarsely ground. Combine the flaxseed with oats, dried apricots, apples, banana chips, wheat, grits, oat bran and wheat bran. Bring thirteen and a half cups to a boil in a large saucepan or a stockpot and add the cereal. Let is simmer for fifteen minutes with occasional stirring until the mixture is thick. Enjoy your own homemade whole cereal.

     

    Eggplant and cheese sandwich

     

    It only takes forty minutes to create a five-star healthy sandwich. Firstly, use ciabatta bread. This is a type of Italian bread that holds up well, making it a good option for brown-bag lunches and lunch boxes. Simply arrange eggplant slices in a single layer on a foil-lined baking sheet and brush both sides of eggplant with a teaspoon of oil. Add lengthwise cut bell pepper removing its seeds and membrane. Arrange and boil for four minutes before placing in the ciabatta bread with cheese.

     

    Being vegetarian is not at all hard to do. Just as long as you have the right ingredients at home and the vegetarian recipes that would fit your preference and taste buds. Make the most out your vegetable diet with these recipes and start that healthy lifestyle.
