    Next time you have a hankering for brownies, try this gourmet recipe, which includes a mint layer.

    Ingredients

     

    For the Filling:
    8 oz. cream cheese, softened
    ¼ cup granulated sugar
    1 egg
    1 teaspoon mint extract
    4 drops green food coloring
    For the Brownies:
    1 cup butter
    4 oz. unsweetened chocolate, chopped
    2 cups granulated sugar
    2 teaspoons pure vanilla extract
    4 eggs
    1 cup all purpose flour
    For the Topping:
    2 oz. chocolate, shaved

     

    Preparation

    Preheat the oven to 350 degrees F. Grease and flour a 13 x 9 in. baking dish; set aside.

    In the bowl of a mixer, beat the cream cheese and ¼ cup sugar until smooth. Add 1 egg, the mint extract, and the food coloring and beat until well mixed.

    Place the butter and 4 oz. chocolate into a large saucepan placed over very low heat. Stir constantly until the chocolate is melted. Remove the pan from the stove and cool slightly, about 10 to 15 min.

    Beat in the remaining eggs, one at a time. Add the flour and blend well. Spread this mixture into the bottom of the prepared baking dish. Pour the filling over this. If desired, create a marbleized effect by dragging a butter knife through both layers.

    Bake for 45 to 50 min., or until a toothpick inserted in the center comes out almost clean. Sprinkle the top with the chocolate shavings. Cool completely before serving.
