Sauteed cherries with raspberry juice
Enjoy vanilla ice cream the gourmet way, topped with some cherries sautéed in raspberry juice and paired with a glass of Sauternes. Chef Luc Huysentruyt demonstrates a simple recipe to liven up a classic and all-time favorite ice cream flavor. The bright red color and radiance of the cherries and raspberry juice is a lovely and striking contrast to the creamy color of the vanilla.
Fresh pitted cherries are used in this recipe, not the canned unadulterated cherries which make a poor substitute. The real thing has a deep red color and fills up a room with its sweet smell. Plump and glossy cherries taste best, and the darker the cherries, the sweeter they are. If you can’t get fresh cherries, dried cherries will do fine.
Make sure you pit the cherries delicately as they easily bruise. Go easy on the ladle when you stir these lovely little red things to preserve their integrity as they cook in the tangy raspberry juice. You can use raspberry juice concentrate for more flavor or freshly processed raspberry for a wilder taste.
It might not be apparent but this heavenly treat is quite healthy and nutritious. Cherries and raspberries are some of nature’s most powerful anti-oxidants. Not only is this recipe healthy, it is also quite easy to do and takes only twenty minutes to finish, from preparation to serving time.
You can store the cherry and raspberry syrup for later use. Heat it a little and simply pour over ice cream any time on any occasion. With this little trick, a commonly available dessert is made more elegant in an instant. You can also use the sauce for pancakes for an uplifting and energizing boost to begin your daily grind.

Ingredients
4/5 cup of butter
1/2 cup sugar
4 cup North cherries, pitted
2 cup Maraschino
2 cup Kirsch
3 cup raspberry juice
4 scoops vanilla ice cream
1 cup almonds, toasted
some mint leaves

Heat a pan on low flame. Drop a spoonful of butter and some scoops of sugar then melt together.

Add the cherries just upon melting and sauté for a while.

Flambé with Maraschino and then remove from fire.

Next, take a scoop of vanilla ice cream and place it on a bowl.Take the flambéed cherries and distribute a few pieces around the ice cream.

Pour a little raspberry juice on the cherries and, as a final touch, garnish with mint leaves and almonds as desired.
