Spinach Avocado Brown Rice
Brown rice is a great fiber and enhanced with the flavors of spinach and avocado, this vegetarian dish is both heart healthy and delicious!
Ingredients
2 cups of brown rice cooked according to package instructions
1 lb. bag of fresh spinach
2 avocados cut-up
4 tablespoons butter
Salt (to taste)
Pepper (to taste)
Olive Oil to drizzle to taste

In a skillet, put the 4 tablespoons of butter and melt.

Add the already cooked brown rice and cook to desired crispness.

Add the spinach and stir constantly until the spinach is soft and cooked.

Remove the skillet from the stovetop.

Add salt and pepper to taste and drizzle olive oil to your desired preference.

Add the avocados and mix tenderly but well.

Serve immediately.
This is a very good accompaniment dish to fish or chicken.
