Ledikeni are deep fried cottage cheese balls stuffed with khoya and served in sugar syrup. This is quite like rasgulla the only difference being is the khoya stuffing. More Indian vegetable soup recipes
Ingredients
2 cup fresh Paneer (cottage cheese)or you can also prepare it at home by curdling the milk
½ cup cream of wheat or sooji
4 tablespoon evaporated milk or Khoya
2 tablespoon clarified butter or Ghee
1 cup of any vegetable oil for deep frying
2 1/2 cup of white sugar
3 cups water
In a large bowl mix paneer, cream of wheat and 2 tablespoon clarified butter or Ghee. Knead it into dough and set aside.
In order to prepare sugar syrup, boil water in a pan and add sugar to it. Let it boil for about 6-8 minutes or till the desired consistency is reached.
Divide the dough into small equal portions, stuff each part with khoya, and roll it into small balls.
In a separate deep frying pan, heat some cooking oil and deep fry the dough on medium heat until they turn light brown.
Drain off excess oil and allow the dough balls to soak in the prepared sugar syrup for a day before serving.
