Posole
Posole is a spicy Mexican soup that’s easy to customize. Try adding cheese, more cilantro, onions, leeks, radishes, or greens to the soup – or serve it simple and true to this recipe. Get more Mexican diet soup recipes here.
Ingredients
1 lb. pork tenderloin, cut into bite-sized chunks
2 teaspoons Southwest chipotle seasoning blend
15 oz. canned white hominy
15 oz. Mexican-style stewed tomatoes with jalapenos (undrained)
1 cup water
¼ cup chopped fresh cilantro
Olive oil spray
Spray a large skillet with olive oil and place over medium high heat.
Shake the chipotle seasoning over the pork, then spray with olive oil.
Place the pork in the skillet and sauté until golden, about 4 minutes. Add the hominy, tomatoes, and water. Bring to a boil. Reduce heat and cover. Simmer until pork is tender, about 20 minutes. Stir in the cilantro.
