Slow-Cooked Corned Beef And Cabbage
A classic dish usually served during St. Patrick’s Day, Corned Beef and Cabbage cooked in the crock pot is super easy and mouthwateringly delicious. This recipe uses corned beef brisket, which is an inexpensive cut of meat that is cured in brine for a period of time. Corned beef does not contain any corn, and refers to the process of corning or curing. The corned beef in this recipe is seasoned with onions, vinegar, sugar, and pepper and cooked with small wedges of cabbage to make a simple yet extraordinary tasting stew that is sweet, tangy and savory. Serve this dish with some boiled potatoes and mustard vinaigrette for a complete and sumptuous meal.
Making a feast out of inexpensive ingredients, corned beef and cabbage is a one-pot stew that takes quite some time to cook, taking the whole day to make the meat melt-in-your mouth tender. The cabbage will almost melt into the liquid and create a lusciously flavorful stew. While it takes all day to cook, it does not need much baby-sitting however; with the help of a crock pot, it can be left on its own while you do other things such as household chores or even go out of the house and come back to a perfectly cooked meal. You can either cook the stew for twelve to fourteen hours on low heat or six to seven hours on high heat setting. You can either start the stew the first thing in the morning or cook it overnight, depending on your schedule and preference.
Besides the long hours of cooking, this recipe is so easy a first-time or novice cook can easily do it. After the ingredients are chopped, everything goes in the crock pot and there’s no need for constant stirring, elaborate methods, or complicated techniques.
Ingredients
3 lbs. corned beef brisket
1 large onion, quartered
1 head of cabbage, cut into small wedges
1/2 tsp. coarse ground black pepper
2 tbsp. vinegar
2 tbsp. granulated sugar
1 cup water
Preparation Instructions
1 Combine all ingredients in crock pot, with cabbage on top. Meat might have to be cut into smaller pieces to fit.
2 Cover and cook 12-14 hours on Low Heat or 6-7 hours on High Heat.
