OSCARS - What's on the menu at the Governors Ball

200 quarts milk, 5,000 cage-free eggs, 150 pounds organic sugar, 600 main lobsters, 250 pounds sticky rice, 50 whole yellowtail snapper, 400 pounds Snake River Farms new york steak, 1600 pounds unsalted butter, 20,000 pieces of California grown micro greens are just some of the ingredients to complete a successful Oscars 2013 Governors Ball with Chef Wolfgang Puck.
19 years cooking for The Academy, Chef Wolfgang changed up the Governors Ball. Instead of a sit down dinner he opted for the Small bites idea. A way for The Academy to mingle.

1 - Takes 1,000 pounds of Guittard Chocolate to fill these Oscar molds then painted with 24k gold (10 pounds edible gold dust). Each 500 pieces are handmade and the Oscar molds are stored back in the safe for the next year. A delicious take home.
2 - Chinois Chicken Salad, Wontons, Chinese Mustard Dressing
3 - Baked Potato & Caviar
4 - Crystal Vacherin is a melange of berries and creme, sugar chandeliers, hand piped strands of royal icing
5 - Chicken pot pie with black truffles
6 - Pistachio and marzipan pave, Huckleberry macarons
7 - Mango Crumble is a mango brunois and passion mango cream
8 - Beluga lentis, cauliflower, baby vegetables (Vegan)
9 - Slow-braised lamb shank "Shepherd's Pie"
