Wholesome Baked Macaroni and Cheese
Almost everyone loves macaroni and cheese. This version is not only full of flavor, it is packed with nutrients and fiber. Enjoy!
8 oz. (1 box) whole grain elbow macaroni, uncooked
8 oz. low-fat sharp Cheddar cheese, shredded
12 oz. low-fat small curd cottage cheese
1/4 cup low-fat Parmesan cheese, grated
8 oz. low-fat or fat free sour cream
Salt and pepper, to taste
1/ cup dry whole-grain bread crumbs
1/4 cup unsalted butter, melted
Preheat oven to 350 degrees.
Cook macaroni according to package directions. Drain.
In a 9” x 13” baking dish, stir together macaroni, cheeses, and seasonings.
In a small bowl, melt the butter. Add bread crumbs and mix together.
Sprinkle bread crumb mixture over macaroni mixture
