Ballotin of salmon marinated with fennel Recipe from Gourmandia (recette pigeon sauvage)
Ingrédients:
1 kg de filet de saumon Norvégien
2 fenouils• 1 carotte
4 poireaux
500 g de champignons de Paris
300 g de gros selâ
150 g de sucre en poudre
1 poignée de poivre concassé ainsi que de fenouil secâ
50 g de beurre
Instructions
Place the salmonfillet on a dish at its size. Deposit above leek green, fennels and carrots mixed, then coarse salt, sugar, dry fennel and pepper. Let marinate 48 H with the refrigerator. Slice thinly the white of leek and mushrooms fresh. Make sweat them with butter during 5 mn, season, then let cool. Withdraw vegetables of the net of salmon, then slice thinly in fine slices.
