You can use green beans, broccoli, cauliflower, cabbage, peas, tomatoes, zucchini, and other vegetables popularly used for stir-fry. You can also use mushrooms for texture and flavor. Use different kinds of mushrooms for a gourmet treat. As much as possible, avoid using vegetables with too much water content as this will cause the meatloaf to become watery and make it harder for it to bind together. You can also use fresh herbs and spices to flavor the meatloaf including chives, parsley, sage, basil, or cilantro. Avoid using powdered spices since this will dry out the meat. If you want to spice it a little, you can use a dash of cumin or curry, as well as chili powder but the moisture must overpower the powder.
Fresh chili also goes great with this meatloaf recipe for a Mexican-inspired dish but go easy on the peppers as they can overwhelm the whole dish.
