Egg-Free Wheat-Free Milk-Free Meatloaf
As the name suggests, this healthy meatloaf recipe contains no egg, no milk, and no wheat or flour. Regardless, it contains plenty of vegetable and flavor including potato, onion, carrots, plus any chopped vegetables of your choice. You can use almost any kind of vegetable to add in this recipe. For best results, use seasonal and organic vegetables, which have better flavor and more nutrients. You can use green beans, broccoli, cauliflower, cabbage, peas, tomatoes, zucchini, and other vegetables popularly used for stir-fry. You can also use mushrooms for texture and flavor. Use different kinds of mushrooms for a gourmet treat. As much as possible, avoid using vegetables with too much water content as this will cause the meatloaf to become watery and make it harder for it to bind together. You can also use fresh herbs and spices to flavor the meatloaf including chives, parsley, sage, basil, or cilantro. Avoid using powdered spices since this will dry out the meat. If you want to spice it a little, you can use a dash of cumin or curry, as well as chili powder but the moisture must overpower the powder.
Fresh chili also goes great with this meatloaf recipe for a Mexican-inspired dish but go easy on the peppers as they can overwhelm the whole dish. 1/4 cup potato - raw, grated
1/4 cup onion - chopped
1/4 cup carrot - grated
3/4 teaspoon salt
1 dash black pepper
1/2 cup broth
1 cup vegetables – chopped

Transfer mixture to greased loaf pan and bake it for about an hour in a preheated oven at 350 degrees F.
