Cheesy Mushroom Pizza
Top prepared pizza dough with pesto sauce, mushrooms and cheddar cheese for a super delicious pizza that everyone will love including kids and vegetarians. This healthy pizza recipe can be made with frozen pizza dough, which can be bought in the supermarket or grocery, or with homemade pizza for a fun meal for the whole family. This also makes a great party treat for friends and guests.
Instead of the usual tomato sauce or pizza sauce, this pizza dough in this recipe is covered with pesto, made with basil, olive oil and pine nuts. This is an Italian or Mediterranean condiment that is sold in delis or groceries in jars. Pesto has a bright green color and aromatic, delicately sweet and nutty flavor that makes for a gourmet-tasting pizza. You can also make your own pesto sauce if you have fresh basil in your garden or you can get fresh basil in the market. When making pesto, it is best to use sweet basil or Italian basil, as there are many different kinds of basil.
After washing the basil leaves and taking out the stems, chop them coarsely and place in a food processor or blender and gradually add olive oil, making a paste or puree. Gradually add the pine nuts to give the pesto a wonderful texture and flavor. Season with salt and pepper but don’t add too much salt since you will be seasoning the pizza with cheese, which is already salty. If you don’t have a blender and food processor, you can also ground the finely chopped basil using a mortar and pestle and gradually adding the oil and pine nuts. Basil pesto has a lot of uses aside from pizza sauce. It can also be added to pasta, stews, steamed fish and meats. It also makes a delicious addition to rice.

7 oz. pizza dough
13.5 oz. mushrooms, well chopped
Salt to taste
Black pepper to taste
3/4 cup pesto
1 cup low fat cheddar cheese
