Lamb square cut ( carre d'agneau ) in a Persillade with Stuffed Onions and Zucchinis

1 carre d’agneau (from a milk-fed lamb) about 1.76 oz., 2 onions, 2 zucchinis, 1 egg, 1.8 oz. Parmesan cheese, puff pastry, 1/2 lb. spinach, 1/3 lb. sweetbread, 1.4 oz. butter, salt, pepper, a bunch of parsley, 1 ½ tablespoons mustard, 1 truffle Persillade: 1 ½ tablespoons bread crumbs, 2 tablespoons chopped parsley, 2 garlic cloves
Prepare the persillade by mixing the parsley, 2 chopped garlic cloves, and breadcrumbs until smooth. Set aside. Season the carre. Lightly precook in some oil in a saute pan for about 5 minutes. Add 1 ½ tablespoons butter and allow to cook for 15 to 20 minutes, turn regularly. Sauté the spinach with shallots in some fresh butter. Dice the sweetbread and bake until crunchy. Prepare 4 small square molds with the puff pastry. Brush egg yolks over the pasty and brown in the oven. Dice the zucchini and blanch. Sauté with a small scoop of butter. Beat an egg and slowly stir into the zucchini. Add some pepper. Grate 1 oz. Parmesan extremely fine and add to the zucchini. Empty the onions to obtain 2 shells per person NOT SURE WHAT THIS LAST SENTENCE MEANS. Blanch. When the carre is cooked, remove it from the pan and turn on the oven Melt 1 ½ tablespoons of butter in a small saucepan. Cover the entire carre surface with mustard. Place a second layer with persillade over this and sprinkle with melted butter. Place the whole in the oven for one minute, browning it. Prepare some lamb gravy by mixing the carre cooking liquids with 2 to 3 spoons of water. Scrape the bottom of the pan. Strain. Place the spinach in each small puff pastry. Add the sweetbread. For the presentation, place 2 onion shells WHAT ARE ONION SHELLS?, a small puff pastry, and the carre in the middle of each serving dish. Decorate the onions with some chunks of parmesan cheese, sprinkle with truffles (a la julienne). Pour lamb gravy over this and finish with a branch of parsley.
