Pineapple Chicken Salad
Summer is here and heavy meals tend to weigh uncomfortably on the body. Juicy fruits like pineapple and light meats like chicken are more suitable to the summer months than heavy meats and sauces. Pineapple is high in vitamin C and offers a fair amount of folate, pantothenic acid and even a splash of vitamin A. It’s juiciness is perfect for summer and it replenishes the body with fluids that are necessary to keep hydrated during the hot summer weather.
Chicken, of course, is a great source of protein as well as providing the body with tryptophan, vitamin B3, selenium, vitamin B6, and phosphorus, to name a few benefits.
4 chicken breasts cooked and chopped into bite size pieces
3 cups fresh chopped pineapple
24 oz. bag of fresh spring mix
2 cups of cherry tomatoes sliced in halves
In a large bowl, combine the chicken, pineapple, and spring mix and mix well.
Drizzle desired amount of olive oil and lemon juice over the salad.
Sprinkle with desired amount of salt and pepper.
Add a few dashes of dried basil.
Mix the salad well but tenderly.
Divide evenly onto 4 chilled plates.
