    Marinated Salmon Ballotin with Fennel

     

    Salmon is a kind of food which is seemed delicious and nutritious meal in the world. There are many ways to cook it, and here we present smoked royal salmon fillet medallions. How about trying some all time favorite – filet! No bones, no skin, just all good flesh that can be cooked any way you like. I can taste it now! Don’t know how, you say? It isn’t hard but it does take practice. The easy to follow instructions are coming up next.

     

    Ingredients

     

    2 1/3 lbs. fresh salmon fillet, 2 fennels, 1 carrot, 4 leeks, 1 lb. button mushrooms, 2/3 lbs. coarse salt, 1/3 lb. sugar, 1 handful ground pepper and dried fennel, 3 ½ tablespoons butter

     

    Preparation Instructions

     

    Place salmon fillet on a plate. Put the leek green, fennels, and carrots on top. Add some salt, sugar, dry fennel, and pepper. Marinate for 48 hours in the refrigerator. Mince the leek white and fresh mushrooms; sweat in butter for about 5 minutes. Season. Allow to cool. Remove the vegetables from on top of the salmon fillet. Cut the fish into, long, slices. Overlap 2 or 3 slices. Place the vegetables on top and roll. Close the ballotin. If desired, use the leek greens to tie the whole together. Decorate with fennel green and olive oil.
