    Caramelized Fennel, Onions and Garlic

     


    This simple dish is delicious as an accompaniment to an entree, but it's also great as a snack or side dish. Fresh fennel, sliced thin and rounds separated, onions sliced thin and rounds separated, and whole garlic cloves all sauteed together in olive oil until the natural sugars emerge and make for one extremely delicious home cooking recipe.

     

    Ingredients

     

    3 fresh fennel heads sliced thinly and round separated
    3 medium white or yellow onions sliced thinly and rounds separated
    1 cup of whole fresh garlic cloves
    3 tablespoons Olive oil
    Lemon pepper (to taste)
    Salt (to taste)

     


    In a large skillet over medium heat, heat up the olive oil.

     

    Add the sliced fresh fennel, sliced onions, and whole garlic cloves.

     

    Sprinkle with lemon pepper and salt (to taste).

     

    Let the ingredients cook, stirring frequently to prevent burning, until they are brown and caramelized. Keep stirring to avoid burning. They should be very browned. This could take up to approximately 10-15 minutes. Keep an eye on them.

     

    When done, serve as is or with an entree. They go very well with any meat and all vegetables, rice, and pasta.
