CNN PRODUCER NOTE Bouchebebe was traveling through the Galapagos when she came upon Tortuga Beach where tried one of the best dishes from her travels. She says she first noticed the fishing pier on the beach when she heard salsa music faintly playing in the background. As she and her fiance approached the pier, they were overwhelmed by a delicious aroma of food that was wafting through the air. 'We watched three ladies prepare and cook fresh fish in a makeshift kitchen with a portable stove and mini fridge,' she explained. 'It was not really a restaurant, but more like an outdoor public space by the pier with a few plastic tables and chairs, and many local people standing by, waiting for their turn to have a seat,' she said. While waiting in line, she realized that this place only offered one dish. 'It's a whole fish that was previously marinated, then dipped in a batter and deep fried to crispy perfection. It's served with pickled spicy onions, fried plantains and rice,' she said. 'It was such a simple dish, served without fanfare, yet a real delight.'

Over the past 12 months or so, I have traveled to Italy, Germany, Scotland, Greece, Switzerland, India, Hong Kong, Singapore, Mexico, Uruguay, Argentina, Brazil, Ecuador and the Galapagos... During our extraordinary journey in Darwin's land, we experienced wonderfully fresh food from family eateries to various restaurants, but on our last night before flying out of Santa Cruz, we strolled along the harbor and came upon an outdoor kitchen serving the catch of the day. We could not resist and sat down to enjoy the freshest fish in the world, the whole fish is marinated (I detected grated lemon, turmeric, coconut milk and other spices), then deep fried, and is served with pickled vegetable, plantains and rice... everybody ate with their fingers, it was finger-licking delectable and the best meal of our trip!
