CNN PRODUCER NOTE jfenson and her husband recently came back from their sixth trip to Peruvian Amazon. They spent a portion of their trip traveling down the Amazonian River in a Clavero, a historic riverboat. It was while they were traveling through the Pacaya Samiria National Reserve, the second largest reserve in the Amazon, that she had one of the best travel dishes. They decided to grab dinner at the Dawn, a restaurant in the Amazon Cafe in Iquitos, and she order the chef's special, which that day was patarashca de dorado, con papas gratinadas. She says the fish is seasoned with aji paste, garlic, cilantro and other spices and then it is wrapped in a bijao leaf and steamed until tender. 'When I took the first bite, I could not believe how absolutely delicious it was,' she said. She decided to ask for the recipe and discovered that the recipe was actually created by the restaurant owner's wife. 'I am going to try making this dish at home. But I won't be able to duplicate our table at the cafe on the Malecon, looking out over the Amazon,' she said.
